Diamond in the rough cupcakes!:)

The reason we named them this is because we cooked our cupcakes in a muffin tin so the outside turned  brown before the cupcakes were cooked all the way, but when you cut them open you're sure for a colourful surprise!:)

Ingredients! ~ For one tray of cupcakes!
100 grams margarine                                              Icing
100 grams caster sugar                                      As much icing sugar as necessary
150 grams self raising flour                                 Water
2 eggs                                                                food colouring
2 different food  colourings                                 Vanilla essence


Method! ~ all in one method!






  • Preheat the oven to 350 degrees F, 180 degrees C or gas mark 4:)   
  • Once you have all of your ingredients measured put them into a mixing bowl and mix them until a nice yellow sticky mixture is left:)
  • Then split the mixture into two different bowls so you can add the food colouring!
  • either grease the cupcake tray or place the cases into it.
  • Add one colour of the mixture into all of the cases, leaving some of the mixture if possible:)
  • Then put the other colour mixture on top of the first mixture!
  • If you have any of the first colour mixture left, you can  place it on top of the mixture.
  • Place it into the oven and leave for around 15-20 minutes(longer if necessary). 
  • To check if the cupcakes are finished get a metal skewer and put it through the cupcake all the way to the center, If the skewer comes out with any uncooked mixture then the cupcakes are not ready, when it comes out clean they are ready!:)
Icing!:) ~ royal icing
  • Leave the cupcakes to cool on a wire tray while you make the icing:)
  • Put some of the icing sugar into a bowl with a drop or two of  food colouring and a drop of vanilla essence.
  • Carefully add teaspoons of water until the icing firm yet capable of moving with ease:)
  • Decorate the cupcakes with as much icing as you like!:)
